Sour Cream Pound Cake

Don’t you just love it when the first thing you choose to make from a new cookbook comes out perfectly? I had never seen or heard anything about the book – All Cakes Consideredby Melissa Gray until it caught my eye as I walked passed it in the library. Flipping through it while considering whether to borrow it or not, the author came through to me with her easy-to-read, humorous writing, although truth be told, the mouth-watering pictures were the thing that sealed the deal at the time (I’m just a sucker for good-looking food). A couple of weeks ago, Alex and I made the very first recipe in the book – The Man Catcher Sour Cream Pound Cake. It turned out like a dream, one of the best pound cakes we’ve ever eaten and so easy to make. I can’t wait to try out the rest of the recipes. Check out the book at your local library and happy baking! :)

Measure the sour cream
Make a butter and flour mixture to grease the pan - a tip from a different book (you can just use PAM Baking spray)
Brush the inside of the pan with the butter and flour mixture
Place the softened butter in the mixer bowl, mix until smooth
Measure the sugar
Add sugar to butter (½ cup at a time), cream butter and sugar
Measure the flour
Whisk all the dry ingredients together
Once butter and sugar mixture is thoroughly combined and creamy-looking
Add eggs, one at a time
Add dry ingredients, alternating with the sour cream
After adding flavorings, the batter looks ready
Pour into prepared pan

Tender, moist, and delicious!

2 sticks (1 cup) unsalted butter, at room temperature
3 cups sugar
5 large eggs
3 cups all-purpose flour
¼ teaspoon baking soda
½ teaspoon salt
1 cup sour cream
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 teaspoon orange extract

Personal note: Did not have any lemon extract on hand – ended up using a generous teaspoon each of vanilla and orange extract. Keith and I love the taste. Will probably just omit lemon extract in the future.
