Not my usual marinade for fried chicken but a delicious one nevertheless…..although I have to say I do prefer the seasonings with pork chops, if given a choice. Enjoy! Slightly adapted from Marion’s Kitchen Vietnamese Grilled Pork Chops recipe
2-3/4 pounds chicken tenderloins
1/4 cup fish sauce
1 teaspoon sugar
1 teaspoon garlic powder
1/2 teaspoon turmeric powder
1/2 teaspoon black pepper
Oil for frying (I just use vegetable oil)
Potato starch (for coating the chicken before frying)
In a large bowl, combine chicken, fish sauce, sugar, garlic powder, turmeric, and black pepper. Cover and allow chicken to marinate in the fridge for at least an hour or overnight. When ready to cook, heat oil in a large frying pan or pot on medium-high heat for about 20 minutes. Coat chicken with starch (pack/squeeze on the starch and shake off excess). Fry the chicken pieces for 5 minutes on one side, flip and another 5 minutes on the other or until chicken is cooked through. Remove chicken to a plate and serve.
