Lemon Thyme Financiers

Made financiers for the first time early October – I was aiming for a lemon thyme flavor but of course, I had no fresh lemon or lemon extract at home, lol. I ended up using Fiori di Sicilia extract and topped the financiers with a blueberry or two and tiny sprigs of lemon thyme from my garden. The financiers turned out buttery and tender, with strong citrusy flavor but I was also expecting the thyme flavor to be more pronounced and I could barely taste it.

So, a couple of weeks later, I had to try again. This time, I used 1 tablespoon packed lemon zest (from 2 medium lemons) and 2 tablespoons packed lemon thyme leaves. I followed the recommendations of many fellow bakers (from a baking group I’m part of) which were to rub the lemon zest and thyme leaves into the sugar before using the sugar in the recipe. I was also a little more generous with the sprigs of thyme used on top of the financiers. Overall, the adjustment resulted in a light lemon and thyme flavor – I can actually taste the thyme flavor this time! Delicious! Unfortunately, I did not have fresh blueberries, so I used frozen blueberries as part of the topping. I feel like they bled a lot more into the batter than fresh blueberries, so I do not recommend frozen blueberries.

These are photos from my first batch of financiers – they are so pretty to look at and easy to make as well. The biggest challenge is to refrain yourself from constantly indulging in these tiny, morsel of deliciousness!
