This year, we had a wonderful time with close friends on Christmas. To cut back on time spent in the kitchen on Christmas Day itself, we decided to go with ham as our main course. Since it was already pre-cooked, we didn’t have to slave hours upon hours to prepare something special. :-D For the first time, we tried Costco’s Smoked Sliced Ham, which included a honey glaze mix that we chose to forgo, opting instead for a mustard and apricot glaze (recipe can be found here). The ham turned out delicious!!! We would definitely not hesitate to purchase it again. To accompany the ham, we made Cranberry Wheat Bread (adding golden raisins to the usual dried cranberry/walnut combination), a simple green bean stir-fry topped with almonds, and baked potatoes. For dessert, we had Orange Chiffon Cake with Blackberry Sauce, which was simply divine! I will post the recipe for the chiffon cake and blackberry sauce soon. Good food and great friends…what more could we ask for?
