Here’s a really easy and delicious fish recipe that you can throw together within minutes for dinner on weekdays – the tilapia fillets are lightly coated with turmeric powder and pan-fried. Serve the fish with rice and a side dish of veggie…enjoy!

1½ pounds tilapia (7 to 8 fillets)

Fill a nonstick skillet with vegetable oil, about ¼” deep. Heat oil until hot over medium to medium-high heat. Meanwhile, pat the fillets dry with paper towels. Working with one fish at a time, season with salt and dredge in the turmeric powder, tapping off excess. If you prefer less turmeric, instead of dredging, take a little bit of turmeric and rub it onto both sides of the fish. Add to hot oil, and cook until browned on both sides (you can cook more than one fillet at a time but do not crowd the pan). Remove to a plate and serve hot/warm. NOTE: Yellow-colored oil splatter (from the turmeric powder) may discolor some white surfaces, requiring multiple wipe-over.
