Salmon with Tomato and Avocado Salad

Recently, we cooked salmon fillets on the grill and they turned out absolutely delicious! We paired the salmon with a simple tomato and avocado salad (the tomatoes and avocado were cubed and combined with several spoonfuls of tomatillo avocado salsa). 😋

Directions for cooking frozen salmon fillets on the grill:
Preheat the grill to about 375F – we turned on the top and bottom burners to medium (the middle burner stayed off). Place frozen salmon fillets (we don’t bother thawing) on a small baking sheet lined with foil. Lightly oil fillets and season with your favorite spices (this time, we used Tony Chachere’s More Spice Creole Seasoning – seasoning is salty, so use sparingly). Place the sheet pan with the salmon on the grill, close the cover, and cook for about 20 minutes until fish is cooked through but still tender.

Making the tomato and avocado salad:
Cube 2 (or more if you prefer) vine tomatoes and 1 avocado. Combine tomatoes, avocado, and 4 spoonfuls of tomatillo avocado salsa (Costco currently carries the Oasis Craft Kitchen brand – so delicious!) in a bowl. Serve with salmon. Enjoy!
