Nasi Lemak (Coconut Rice) and Ayam Goreng Berempah (Spiced Fried Chicken)

For our New Year’s day dinner, I made coconut rice and spiced fried chicken and served them with your basic Nasi Lemak accompaniments such as sambal (a spicy sauce), crispy anchovies, roasted peanuts, sliced cucumber, and a hard-boiled egg. I can’t even begin to tell you how satisfyingly delicious the meal was! We are off to a great start for the New Year!

Here’s the recipe for the coconut rice and Spiced Fried Chicken. Our favorite store-bought sambal is Tean’s Gourmet Nasi Lemak Sambal, which is much cheaper at your local Asian grocery store (if you can find it) than any online options. Enjoy!
