For some reason, I was bombarded with numerous ads on Medjool dates on Facebook a couple of months ago, which led me to buy a package of Medjool dates at Costco, lol, even though I’m not a fan of dates as I find them too sweet. So when I saw the Gluten Free Chocolate Date Brownies recipe from FlavCity, I knew I had to try it. The recipe is gluten free and dairy free and the only sweetener in the brownies is the dates (the choc chips on top are optional) – absolutely delicious! ❤️
You can find the original recipe here. Below is my slightly modified version based on what I currently have in my pantry – I used Dutch-process cocoa, so I substituted the baking soda with baking powder, and as usual, my go-to gluten-free flour is Authentic Foods Steve’s Cake Flour Blend. :) Also, since I used a 9” x 13” pan, it took me only about 35 minutes to bake.
12 ounces of pitted dates
Hot water to soak dates
4 eggs
2 teaspoons vanilla extract
1 cup melted coconut oil
2/3 cup Dutch-process cocoa powder
1/2 cup almond flour
1/2 cup Authentic Foods Steve’s Cake Flour Blend
1/4 teaspoon salt
2 teaspoons baking powder
1/2 cup semisweet chocolate chips
1/2 cup walnuts, break into smaller pieces
