I was searching for a simple cutout cookie recipe, something other than the classic sugar cookies. Of course, I turned to my old faithful whole grain baking book for this task. As I was flipping through the pages, this recipe’s introductory paragraph caught my attention. I quote, “Who says cutout cookies for decorating need to be either A) sugar cookies, or B) gingerbread? These chewy oatmeal cookies, with a hint of whole wheat and lots of flavor, are easy to roll and cut out with your favorite shaped cutters.” Actually, the magic word that did it for me was “easy”. :) The cookies turned out delicious. They had a dense, buttery shortbread-like texture, and a flavor reminiscent of graham crackers (I omitted the spices called for in the recipe). Instead of decorating the cookies with frosting, I sprinkled them with turbinado sugar before baking for a little sparkly effect and I also opted to bake them longer for a crisper result (just the way I like my cookies).
