Quick Spaghetti and Meatballs

Where does the time go? We ask that question a lot in this house. :D To prepare a quick meal, I sometimes resort to pre-cooked/instant ingredients to help reduce cooking time. I am picky about the quality and taste though, so not a lot of these ingredients make it to my kitchen and stay there. Here’s a favorite dish […]

Rotisserie Chicken and Preserved Egg Porridge

The cooler, more seasonable weather recently gave me the perfect reason (like I’d need one :D) to indulge in one of my cold-weather comfort foods – porridge! This time, I combined my love of rotisserie chicken and preserved eggs in one pot. Normally, we would eat the preserved eggs as is, like a condiment but I also find them to […]

Chicken Mushroom Soup with Mee Suah (Somen)

When my sister and her family were here this past week, I decided to make Chicken Mushroom Soup, a celebratory staple in our family. Instead of rice, the soup was served with mee suah and hard-boiled eggs – this dish brought back a lot of wonderful memories! For the recipe, check out my Chicken Mushroom Soup post. Enjoy!

Our Easter Meal

Last week was a whirlwind…my sis, brother-in-law, and niece came for a visit and time just flew by. We had a wonderful time and not surprisingly, the food tasted even better with great company. Here’s what we had for our Easter meal – ham, scalloped potatoes, steamed peas, and homemade bread. :D

Macaroni Salad and Grilled Soy Sauce Pork

With the warmer weather, my chives have been growing rather quickly and abundantly in my garden. That and the fact that we’ve been getting May weather in March, I figure it’s time to make our much-loved, favorite macaroni salad. I told Keith, if there’s only one summer dish I could make in the Summer, this would be it! I first […]

Chicken & Tortilla Soup

It has really been unseasonably warm these past few days (but thank goodness the nights are still cool as they should be). Because the house warms up fast in the hot afternoons, I’ve been trying to make dishes that require only a minimal amount of cooking. This dish definitely qualifies as one and is one of our easy favorites. With all […]

Easy Cheesesteak Sandwich

Hmmm…wondering what was Alex looking at so intently? He was actually browsing a Lakeshore Learning Materials catalog, which he has been doing almost everyday since we received the catalog back in January. :D As indicated by its name, Lakeshore sells learning materials and Alex loves those things and can’t seem to get enough of them. To make it easier on our pockets […]

Chicken Porridge

Alex applied for his first library card today at our local library! He also learned to look up books via the online catalog, as well as how to find those books on the shelves. Surprisingly, he was really excited throughout the whole experience. :D How our little boy is growing up… Here’s another dish I […]

Linguine with Asparagus, Tomatoes, and Feta

We went far and near to check out a couple of used pianos today. We’ve been looking for one for Alex for quite a while now. Do you know how hard it is to find one that is in really good condition, reasonably priced, and not located counties away? Well, let me put it this […]

Stir-Fried Shrimp with Penzeys’ Pasta Sprinkle

Here’s an easy and delicious dish that I learned from our close friends (Gregg and Bonnie) a while back. Apparently, Penzeys’ Pasta Sprinkle is not just for pasta, folks. :D I’m fairly sure that Gregg’s original recipe contains cheese (I think parmesan?) but knowing that I’m lactose intolerant, he made a cheese-free version one time when Keith and I […]
