Easy Cheesesteak Sandwich

Hmmm…wondering what was Alex looking at so intently? He was actually browsing a Lakeshore Learning Materials catalog, which he has been doing almost everyday since we received the catalog back in January. :D As indicated by its name, Lakeshore sells learning materials and Alex loves those things and can’t seem to get enough of them. To make it easier on our pockets and to give Alex a sense of satisfaction of earning his “rewards”, we created a responsibility chart where he can keep track of the number of stickers he collects for doing his chores and lessons. Once he reaches his goal, he gets to pick an item from the catalog as a reward. As much as we wish Lakeshore’s materials are a little bit more affordable, we could not be any happier that Alex prefers educational things over regular toys. :D

Moving on to food – need any ideas for an easy and delicious meal during a busy weekday? Well, how about a cheesesteak sandwich? Because we’re using cooked (deli) meat, the sandwiches can be made in no time at all…probably as fast as driving somewhere to pick up something for dinner.  Below are some of the ingredients you’ll need:

1 tablespoon oil (I use extra-virgin olive oil or sometimes just plain vegetable oil)
1 green bell pepper, stemmed, seeded, and cut into matchsticks
1 medium onion, halved and sliced thin
Salt and pepper to taste
1 pound thinly-sliced deli roast beef*
McCormick Montreal Steak Seasoning to taste
Hoagie rolls (about 6 to 8)

*If you have a Heinen’s near you, we love the Two Brothers Seasoned Eye of Round Roast Beef from the deli.

In a large nonstick skillet, heat oil over medium-high heat until shimmering. Add green bell pepper and onion and saute until they are soft and lightly golden brown. Season with salt and pepper to taste. Remove to a dish. In the same skillet, add roast beef and Montreal Steak Seasoning (I use about ½ tablespoon to a pound of meat but note that I use seasoned beef – you may choose to use more seasoning) and saute until beef is heated through, breaking up the meat as you cook. Remove and combine with the pepper and onion mixture until evenly mixed. Lightly toast your rolls and make your sandwich. Quick, easy, and delicious – my kind of fast food! :D

Next, saute beef with the seasoning until beef is heated through,
breaking up the meat as you cook
The secret ingredient – Montreal Steak Seasoning
Combine beef and pepper and onion mixture in a dish until evenly mixed
