Happy Thanksgiving!

It has been a while again and since the last time I checked in, I’ve completed my internship, graduated, and am officially a full-time librarian! :) Life has been insane, of course, with hardly any free time to do much of anything else other than tackling the usual life responsibilities but nevertheless, we are thankful for each other, our family and friends, health, roof over our heads, and so much more!

To avoid slaving away in the kitchen today, I opted for roasting a couple of turkey legs and a thigh – they were massive, lol! Weighing in at about two pounds each, I brushed them with a mixture of melted butter and lemon juice and seasoned with salt and pepper. I roasted them in a 350F oven for about 2 hours – they were sooooooooooo delicious!!! Served with mashed potatoes and gravy, stir-fried green cabbage, and cranberry-walnut bread, the entire meal was on the table in two and a half hours! Happy Thanksgiving!
