A Healthy Start to the New Year

A very Happy New Year to everyone.

New Year here started off with a beautiful, sunny day, which was a treat for those of us who live in Northeast Ohio. For a refreshing change of pace, we opted for salad for dinner today. We had fresh, tender spring mix greens topped with slices of sweet oranges, hard-boiled eggs, and shredded cheddar, with Tyson Crispy Chicken Strips on the side. The meal was simple and easy to put together, and utterly delicious.

I find that the hardest thing about making a salad is having to decide among the infinite possibilities of toppings for the greens. Here are some of my favorites – orange, apple, pear, grape, tomato, blueberry, strawberry, peach, nectarine, plum, dried cranberry, cucumber, jicama, broccoli, peppers, baked potato, steak, pork chop, bacon, rotisserie chicken, turkey sausage, salmon, shrimp, peanut, walnut, almond, cheddar, mozzarella, hard-boiled egg, croutons.

My favorite brands of dressings are Annie’s, Briannas, and Newman’s Own.
