Peanut Butter Cookies

I think Martha (Stewart) couldn’t have said it any better on her website – these cookies are indeed a classic treat for the whole family. This is THE recipe we go to whenever we crave peanut butter cookies – it’s simple, FUN (Alex can vouch for that), and utterly delicious! We first saw it on one of Martha’s DVDs (I’m fairly sure it’s the Favorite Cookies DVD) a couple of years ago, and I can honestly say that I’ve never been tempted to try another recipe since then. Swiper-Alert: keep both eyes on those who love peanut butter – hubby would have swiped all the cookies if I hadn’t. *grin*

Roll the dough into balls.
Arrange them on the baking sheet.
Flatten slightly with palm.
Make criss-cross pattern.
Ready to go in the oven.
Deliciously addictive!!!
Makes about 3½ dozen cookies.

1½ cups flour
1 teaspoon baking soda
¼ teaspoon salt
½ cup (1 stick) unsalted butter, room temperature
1 cup firmly packed light brown sugar
1 large egg
½ teaspoon vanilla extract
1 cup smooth peanut butter

Personal note: If you are concerned about younger kids getting egg on and in them when they are “playing” with the dough, just substitute ¼ cup unsweetened applesauce for the egg. You won’t miss it at all. I was going to try turning this recipe dairy-free by replacing the butter with Earth Balance Natural Buttery Sticks but it turned out that I have less than half a stick left in my fridge. I guess it’s time to hit Whole Foods or Trader Joe’s, and hopefully I’ll be more prepared to do the dairy-free version next time. :-)
