Honeydew-Lime Sorbet

Can you believe that the hardest thing about this post was actually my attempt to take photo of the sorbet without it melting before I’m done? With the persistent heat wave, our house gets so hot during the day (even with air-conditioning). Still, I have to say that the air-conditioner has got to be the best invention in my lifetime. :D And of course, the easiest, most fun thing about this post is the eating part. The sorbet was refreshingly light, with a delicious sweet-tart taste – this thing is addictive…yum! Not only that, it was super easy to make as well. Enjoy!

1 cup sugar
¾ cup water
2½ pounds honeydew cubes
⅔ cup lime juice

Combine sugar and water in a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium and cook until sugar is completely dissolved, stirring frequently (it takes just a few minutes). Transfer to a bowl and cool (lukewarm is fine). Meanwhile, process honeydew in a food processor until completely puréed (you may have to do this in two batches). Transfer the purée to a large bowl. Stir in cooled sugar syrup and lime juice and chill, covered, for at least 2 hours. Then, process honeydew mixture in an ice cream maker until thickened, about 20 minutes. The sorbet will have a soft, slushy texture. If firmer consistency is desired, transfer sorbet to an airtight container and freeze. Remove sorbet from freezer about 5 minutes before serving.

    Great looking sorbet Chris. Just what I needed in this hot summer afternoon. It’s really hot all of a sudden at 36 degrees Celsius. We have had our windows and shutters closed since early this morning just to get the heat out of the house. It worked wonders. I’d rather stay indoors. even without the fan on :-)

    1. Hi Isadora! Not sure what’s going on with WP. I actually found your previous message in the SPAM section (which I rarely check) and that had never happened before. The new ones were okay…they appeared in the inbox (where they should be). Anyway, glad to hear from you again. :D I know what you mean about the heat…feel like I missed most of summer because we tried to stay indoors as much as possible to avoid the heat wave. This week has been pretty good though with cooler weather.
