Green Chicken Curry with Vegetables

Here’s an easy weekday meal if you like curries. This sweet and spicy Thai dish gets its robust flavor from a pre-packaged paste and my absolute favorite brand is Maesri. Just follow the directions on the container (sometimes we just approximate…you can’t go wrong with it) and in no time at all, you’ll have a delicious one-pot meal. Beats carry-out any day – YUM!

Scooping out the curry paste

Combine with coconut milk and cook for a few minutes

Stir frequently

We used boneless, skinless chicken thighs (straight from the freezer)

Once chicken is cooked and tender,

add vegetables (we used frozen stir-fry vegetable blend from Costco)

Add more coconut milk and fish sauce. Bring to a boil and it’s done!

Serve with rice – delicious!!!
