Broccoli Delight

The heat tapered down quite a bit over the weekend and we’ve been getting some much needed rain (yay!) but I’m pretty sure summer weather is not over yet. So, I would like to share a delicious salad recipe that I thought is just a perfect side dish to serve on these hot summer days. I first tasted and fell in love with Broccoli Delight years ago and you would be surprised to know that it didn’t come from any fancy restaurant but instead from the deli section of our local grocery store. :D The salad, with its myriad of flavors and textures is simple and fresh, and is coated with a creamy sweet and tangy dressing. Enjoy!

2 medium bunches broccoli, florets cut into bite-sized pieces
1 small to medium shallot, finely minced*
¾ cup dark raisins
¾ cup salted cashews, coarsely chopped (occasionally, I substitute salted dry roasted peanuts…have you seen the price of cashews recently? Insane!)
1 cup mayo (regular or light)
2 tablespoons sugar
2 tablespoons white vinegar

*Our local store uses red onion instead of shallot, and includes bacon in the salad, which I omitted from ours.

Place broccoli, shallot, raisins, and cashews in a large bowl and set aside. In a separate small bowl, whisk mayo, sugar, and vinegar until smooth. Add dressing to the rest of the ingredients and toss until well combined.  Cover and refrigerate until cool and flavors are blended.

  1. Mattie loves broccoli but dislikes nuts so I might use some bacon instead. Quite a hardship, I know! :P

    1. Hahaha…such torture. :P I would suggest for the recipe…four to six slices bacon…cook until crispy and crumble. :D

  2. Love the colours of the fresh green broccoli. Just checking… The broccoli florets were not blanched first? I love crunchy broccolis (but have never taken them raw). Guess it’s time I did, ‘cos they look really appetising next to the gorgeous looking pan-fried salmon! Yummy!

    1. The florets are not blanched first but you could do it though. :D It took me several years to learn to like raw broccoli because we would always eat it cooked in M’sia. Took me a while to learn to like salad too with all the different greens. :D
