Blackened Fish

So, a couple of days ago, I learned that the first day of Chinese New Year this year will fall on January 23rd. My first thought was “Oh, another year of not celebrating it with my family (back in Malaysia)” which immediately made me feel homesick. My next thought was “But I haven’t recovered from the Christmas cooking yet.” *grin* Like I would let that stop me from making all those CNY goodies as well as an elaborate CNY Eve dinner…(pause) uh…actually, yes I would. LOL We’ll see how it goes in the next few weeks. In the meantime, here’s an easy-peasy dish we love. Have a great weekend, everybody!

Tilapia fillets
A little oil
Zatarain’s Blackened Seasoning

Arrange fish in a single layer on a baking sheet (lined with foil for easier clean-up). Coat the fillets with oil and sprinkle with seasoning on both sides. Broil in the oven (I set the sheet on the middle rack) for about 10 minutes and flip fish over for another 1-2 minutes or until cooked through (fish will flake easily when tested with a fork). Serve with salad, couscous, or anything you love. Enjoy!

Can you believe that I can’t find Zatarain’s Blackened Seasoning in any of my local stores? Picked up the last one we had when we were vacationing in Florida last year. Guess we will have to get it online from now on. We did try the Old Bay Blackened Seasoning as well but the flavor pales in comparison to Zatarain’s.

    1. Thanks for dropping by, Nasifriet. It’s not very often I find myself in a mood for salads (since I don’t grow up with it). I remember when I first came to the States, I wondered, “Why are all these people eating uncooked veggies?” LOL Now I eat like them…sometimes. :-D The spicy tilapia sure did liven up that dish.
