Avocado Ice Cream

Looks like avocado season must be in full swing somewhere. I’ve been getting avocados (6 medium to large ones in a bag) from Costco for under five bucks a bag for the past two weeks. Amazing! We’ve been using the beautiful avocados in our salsa, sandwiches, as a topping on the Chicken & Tortilla Soup, and we even use them to make, get this – avocado ice cream! The ice cream was totally a new thing for us. We were a little uncertain as to whether we would like the taste of it but decided to go ahead and make it anyway. The ice cream turned out refreshingly delicious…not too heavy, not too sweet, and a taste reminiscent of some sort of custard (kinda like my Avocado Muffins). If you don’t know that it’s avocado ice cream, you probably wouldn’t be able to guess it. Still, we love the flavor – definitely something I would make often if I have avocados at hand. :D

The stars of the show

12 ounces avocado meat, approximately 3 small to medium
1 tablespoon freshly squeezed lemon juice
1½ cups whole milk
½ cup sugar
1 cup heavy cream

Note: We added an extra quarter cup of sugar and substituted half & half for the milk and heavy cream. We also added 1 teaspoon vanilla extract to the mixture.

Add avocados,
lemon juice, half & half, sugar, and vanilla extract to a blender
and puree
All nice and smooth
Transfer mixture to a large bowl and whisk in the remaining half & half
Process in an ice cream maker
Transfer to a container and place in freezer until firm

  1. Wow! Your avocado ice cream looks gorgeous! Great for this weather now that it’s getting a bit warmer, eh? We’ve been experiencing a nice early spring temp of 20 deg C. How about you guys over there?

    1. It is great for our unseasonably warm weather at the moment. I keep looking over my shoulder for the rest of Winter but so far so good. Unfortunately, with the warmer weather also comes the risk of severe weather…can’t we just have it good all the time? :D
